Pancakes Anyone?




Pancakes are the best especially on the weekend, when everyone is still sleeping and you are the only one awake, enjoying the peaceful morning sunrise and the smell of light dew upon the grass blades.  The cat saunters over and casually acknowledges its supreme leader (even though I am quite sure he thinks that I am his inferior), tail high in the air as it rubs its head gently against the ankles, weaving in and out till it finally receives its rubbing and scratching of its head.  Cats.  pfffff.

  • 1 1/2 c flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 Tbsp sugar (or more if you like 'em sweeter)
  • 1 1/4 c lukewarm milk (surprisingly this tastes good with evaporated milk)
  • 1 egg
  • 3 tbsp butter, melted
*optional a drop or so of vanilla extract

Mix the melted butter in the warm milk.  Beat egg in a separate bowl before adding to the milk mixture, then add the flour and rest of ingredients.  Warm up your pan while you are doing all the above :P  The pancake mix should bubble up a little while sitting there for a few minutes.

Measure out your size of pancakes, cook till bubbles show through and edges are slightly cooked before flipping carefully.  Butter that side while its bottom is cooking then take said delicious golden unto a plate.  Best served drizzled with real maple syrup or honey.  Enjoy!
